   This is just a fantastic book. Their 2008 edition was just as good, and these annual bound editions of cooks illustrated are fast becoming indispensable for me. The only reason I give it 4 instead of 5 stars is that most of the recipes involve meat, which I don't eat much of. But even with that, the vegetable recipes, techniques and explanations of food science are well worth the cost of the book. Highly, highly recommended. This is just a fantastic book.    I feel the same about every edition I read in these. Some have random good tips that I actually use, the other pieces of information that I feel like everyone already knows, and then there's the reviews on products. I can either disagree with them or agree with them. Sometimes they think one of my favorite kitchen appliaces/gadgets is the best thing in the world. On the next page, they'll criticize the hell out of my other favorite gadget. That's why they always get 3 stars. I feel the same about every edition I read in these.
