    As someone who has minimal interest in spending time in the kitchen, but loves to follow a healthy diet, this book was great for me! Not only did it give me quick and easy recipes, but it helped me convince my husband to eat vegetables in a new and exciting way. I would highly recommend this to anyone looking to continue along a healthy eating path, or looking for any easy intro into a veggie rich diet!

    I eat and love vegetables but I have a hard time figuring out ways to cook them so I was excited to get this book! The contents are divided up (and color coded!) between vegetable basics, spring, summer, fall winter, dressings sauces and dips. Sweet Potatoes and pumpkins are in the fall category and include different recipes like "almond butter sweet potato bowl" and "roasted pumpkin and butternut squash salad". Zucchini is in the summer section and includes recipes like "zucchini pizza boats" a I eat and love vegetables but I have a hard time figuring out ways to cook them so I was excited to get this book! The contents are divided up (and color coded!) between vegetable basics, spring, summer, fall winter, dressings sauces and dips. Sweet Potatoes and pumpkins are in the fall category and include different recipes like "almond butter sweet potato bowl" and "roasted pumpkin and butternut squash salad". Zucchini is in the summer section and includes recipes like "zucchini pizza boats" and "crispy Zucchini patties". At the beginning of each category, there is a listing of each veggie used and the recipes, so it's easy to glance down and pick something up with the specific veggie you are wanting to cook. Each vegetable also has its own page of facts and interesting things about it and what to look for when buying it. The back of the book includes references and recipes index which was helpful. I have not tried all the recipes yet, but I still recommend reading this book and trying the recipes if you're interested in eating more vegetables and different ways of cooking them. It is divided in into sections based on the seasons and each vegetable in that season has numerous recipes to choose from. My favourite recipes so far are Quino Stuffed Peppers, Nicoise Salad with Green Beans, and Zucchini Pizza Boats. The beginning of the book goes over vegetable basics and includes tools, pantry staples, simple prep, basic cooking techniques, and kitchen hacks. The end of the book co I received a complimentary copy from Callisto publishing company. This is an amazing cookbook. It is divided in into sections based on the seasons and each vegetable in that season has numerous recipes to choose from. My favourite recipes so far are Quino Stuffed Peppers, Nicoise Salad with Green Beans, and Zucchini Pizza Boats. The beginning of the book goes over vegetable basics and includes tools, pantry staples, simple prep, basic cooking techniques, and kitchen hacks. The end of the book covers measurement conversions and the dirty dozen and the clean fifteen so we can avoid produce that is most susceptible to pesticide residue. I recommend this cookbook to anyone wanting to include more vegetables into their diet or who just want some amazing veggie recipes.
