My first introduction to this wonderful new cookbook was when the author sent me an electronic preview. Not being familiar with the sous vide method of cooking, it took a bit to determine if this was for me or now. I had a friend who had the equipment and let me borrow it to play. I will admit I was very pleasantly surprised at the quality and taste of the food from this method. I also found that with a bit of imagination, I could convert some of these fabulous recipes to traditional cooking methods. I have just received my print copy of Carey’s book and it is a work of art. The stunning photography is enough to set your mouth to watering. The instructions in both print and digital versions are very clear, and the first chapter does a great job of explaining the entire process. For anyone wishing to practice a healthier method of cooking, or who just loves new gadgets to play with, this method – and this cookbook – are for you. I will recommend this one to my cooking buddies.

Then there are calories and portions that are explored. Finally it explores temperatures and the Sous Vide machines. The second is how the cook book is divided into different things and temperatures making it really easy to use and find things. While the recipes seem like they are hard to understand and even high class they are surprising easy to understand and do. The recipes don't require for the most expensive ingredients to create. Finally the cookbook does not have a central theme to it so you can find any kind of dish in it. The recipes may seem basic once whipped up they can be served along any fine restaurant perfect for dinners with friends or a family dinner.

A lot of great detail I’m brand new to sous vide, and really needed to understand some of the basics. This book explains everything clearly and the recipes, which I haven’t yet tried, look good as well. I’m looking forward to getting started!

A good basic book not only about the method, but also equipment with recipes with normal, pantry ingredients to maximize flavors. Although I have been using a sous vide for about a year to perfect meats, this book encouraged me to break out of my protein zone and try veggies and eggs.
