However, the title of the book “ONE-PAN WONDERS” means different things to different people. The book states in the introduction it is not a “Dump-and-stir” to “set-and-forget-it” book. Books like this, that involves cooking techniques, tends to taste better than those Dump-it-and forget-it recipes. As a student I first made these meals in two class sessions at a Sur-La-Table store. Made them again at home. Braised Chicken Thighs with Chard and Mustard. Excellent Meal. Dutch Oven. Beef En Cocotte with Creamy Mushroom Barley and Salsa Verde. It was Ok, thou Beef and I do not get along well. Dutch Oven. Chickpea Tangine with Artichokes and Green Olives. I used an instant pot not a Tangine. Chickpeas cook much faster in a pressure cooker. Excellent meal, My favorite of those I prepared. Lemon-Herb Cod with Crispy Garlic Potatoes. It was ok for a healthy meal. Sheet Pan. If I am going to have Fish and Potatoes, I prefer the unhealthy deep fryer. Chicken with curried vegetable couscous and lime-yogurt sauce. Excellent, my second favorite here. Skillet is used in the book, I used a Tangine.

Maybe in some sense they are one-pan, but almost all require many dishes -- taking items out of the "One-Pan" and putting them aside in other dishes while you cook something else in that "One-Pan", or prepping items using other dishes before adding to the "One-Pan". Purely as recipes, I would give this four stars. I found many I'd like to try, including some very promising weeknight-eligible recipes. However, as another reviewer pointed out, very few of these are actually one-pan recipes. Additional cooking methods and dishes may make for a tastier finished product but if you were looking for a literal one-pan dish you will find few here. I'm a big fan of Cook's County magazine, but was very disappointed with the cookbook. I checked it out from the library and am glad that I did. I would have been mad if I'd purchased it.
