    I wasn't sold on this one at first because I thought it leaned a little too heavily on the side of typical meat foods translated into vegetarian--you know? I was never big on meat foods to begin with, so that idea just doesn't appeal to me. But when I looked closer, even those meat foods I was never interested in sound kind of delicious when made with veggies--stuff like the butternut squash steaks pictured on the cover, which look like they're meant to mimic grilled chicken or something, but I I wasn't sold on this one at first because I thought it leaned a little too heavily on the side of typical meat foods translated into vegetarian--you know? And then also? The layout is great--short intros, concise cooking instructions, ingredient lists that are not overwhelming, and all items relevant to the recipe included on the same page or right after, which is exactly the set-up I was missing in the previous books I've reviewed. It's simple and easy and while there are still some things that I'm saying NO THANK YOU to (Spaghetti Squash Ribs, I'm looking at you), there are enough that I'm excited about trying that I miiiight just think about purchasing this one at some point.

    Of the 100 recipes in this book I would say 98 of them are ones that I cannot wait to make again and the other two are great, but require me to build a cooking skill set more before I try it again.
