Nobody in my house eats gluten-free, but we have friends and extended family with gluten intolerance and one friend with Celiac. It's so hard finding recipes that make everybody happy - especially when you're not a particularly advanced cook, like me. Then a friend turned me on to A WORLD OF FLAVOR. This is the first cookbook from Nancy Miller and Amber Barrett, the mother/daughter team behind the food/photography blog "The Whisk and the Spoon." The cookbook features recipes from all over the world (including India, China, Cuba, France, etc.), and covers everything from breads, donuts, cakes, and cookies, to appetizers, main dishes, salads and sides. A lot of my gluten-free friends complain about the textures and flavors of gf substitutes and it seems like these authors have gone to great lengths to find the right blends of different types of flour to make the recipes come out right. Whether you're gluten-free or not, that's awesome - because it means they should taste good, right? The recipes in here range from very straightforward to quite complicated. Based on my current skill level, I started with a few of the simpler ones. One of the easiest ones out of the gate was the Almond Flour and Parmesan Chicken Tenders. If you are a gf newbie, listen up: You don't need to go to a health food store to find almond flour. I found all the ingredients at Trader Joe's, this included. (FYI - it's in the nuts section - not the flour section!). Anyway, after a quick dipping and battering, and 25 minutes of baking, they were done. And OH MY GOD THEY WERE SO GOOD. Normally I find chicken tenders dry out really easily. But with this recipe, the chicken was so tender and juicy, all sealed in by the buttermilk/almond flour coating, and the flavor was delicious! You get that savory, rich Parmesan taste with the heartiness of the "breading" and the hot juicy chicken but with very little fat - and no oil! So it's basically comfort food - except healthy! And not heavy at all. I said "wow" with my first bite and did a little dance on the way to the kitchen after the meal (for real). This one is definitely going in the rotation. The next recipe I tried was the Mongolian Beef. I absolutely love Chinese food but I thought for sure this would be one of the more complicated recipes and thus a bit out of my wheelhouse. Turns out I was wrong! Very straightforward and almost everything in the ingredients list was something I already had in the house. The most exciting thing for me was that the beef came out just like a Chinese restaurant - very soft and tender in flat strips - and the sauce was the perfect consistency! As for the flavor of the sauce - full disclosure: I messed this one up. I'm trying to eat low sugar so I thought I would be clever and cut the sugar in half, not realizing that I probably should cut the soy sauce in half, too. So it came out really salty (!), and I can't really comment on how it's supposed to taste. However, I was very encouraged by the parts of the recipe that came out right, so I'll definitely try this one again. After that, I made the quiche. Goat cheese, sun-dried tomatoes, garlic and green onions together?? Yes please! This was my first quiche ever so I was pretty sure I'd find a way to screw it up, but again, the steps were pretty simple and easy to follow. When I finally took it out of the oven, I was so proud of how pretty it looked, I took a picture. Both the almond-meal crust and the filling held together very well. The ingredients were a great flavor combination, and overall the taste was rich and satisfying. I want to make this one again too. Flipping through the rest of the book, so many recipes caught my eye. The photos are gorgeous - I basically want to eat everything in here! I know it will be a while before I can work up to some of the more complex recipes (like the Triple-Layer Birthday Cake from the cover, or the General Tso's Chicken), but I've got others, like the Oyster Casserole and Beef Shank Stew, in my sights now. I may even attempt the Upside-Down Lemon Meringue Pie someday because it looks good enough to cheat on my low-sugar diet with... Anyway, I was really impressed. In reading the introduction, it's clear that the cookbook is coming from a very personal place for the authors - yet at the same time, it's accessible to everyone. These recipes are gluten free, but they're also just really good! As mentioned, I have a few friends and extended family with gluten intolerance and/or Celiac, and I would feel good knowing that I could make these recipes to satisfy everyone at a party or family dinner. Definitely a great buy for foodies and gluten-free folks alike!
