( A confession, although I'm not sure it was my first dish cooked in a pressure cooker, fresh artichokes are ONLY cooked in a pressure cooker, as far as I'm concerned.) I Really Tried to Like this one... I am making lifestyle changes especially to my eating habits, and my new favorite tool is my Pressure Cooker. So, I really wanted to love this book, but I'm not sure that with the incessant use of heavy whipping cream and whole milk that these recipes are truly "light". It would have been helpful to more than just the sporadic pictures here or there that is in this book. It also would have been nice if the author provided "Alternatives" at the end of each recipe I Really Tried to Like this one... So, I really wanted to love this book, but I'm not sure that with the incessant use of heavy whipping cream and whole milk that these recipes are truly "light". For instance, there are people using plant based milk or grek yogurt in lieu of other creamy alternatives. So, I would have expected something that at least provided options for people with dietary constraints, etc. This was a Miss for me.
