The ideas, all healthy, are endlessly delicious and varied with room to adjust or replace ingredients. I like that he doesn’t go off on tangents in the book. This book is the third volume in a series on Mediterranean food. Volumes 1 and 2 contain 40 and 60 recipes. If you have an interest in staying healthy, the three volumes would make a wonderful gift for yourself or others.

What I like most about this book is its emphasis on creating entire meals based ON the salad, rather than the other way around, or as the salad being an accompaniment to the meal itself. Did I tell you about the recipes themselves yet? No? The blending of cucumbers, feta cheese, steak, is perfect. Salad dressings with olive oil, honey, lemon zest, salt and pepper…perfect. Delicious Healthy Salads! Greek food is one of my favorites, so I was eager to read this cookbook. It is full of delicious recipes. Most of them are quick to fix, which is a bonus for a busy person. The more labor-intensive recipes are worth the time, the end result is tasty. This cookbook is organized by type of salad, the recipes are clearly written, and easy to follow. If I had to choose a favorite, it would be the Cucumber Salad with Feta Cheese.

The Mediterranean diet is superb in taste and health benefits. If you have never tried it, I warmly recommend it.

What a great cookbook we have here. I have always loved a good salad. And if you do too you need to get this book because I think you will love it! I must admit I am especially interested in making the Pistachio Salad dressing…yummy. And many of the pasta salad recipes especially spoke to me. I can't decide which to make first.
