My mom got me this for Christmas after I expressed the slightest interest in learning how to cook more meat free meals. It's very down to earth (if that's possible for a book of recipes). I like that with every recipe there are variations for each season so you can keep your ingredients fresh. I also love the opening section that's just "things you should always have in your pantry". If you have been considering becoming a vegetarian this is an excellent cookbook to start your journey. The recipes are easy and ingredients you will find in your local market. I am no way a vegetarian, I am a runner and I have found eating vegetarian the day before I run (I run every other day) has been great for my running and my system. I have already made the Herbed Omelet and it was delicious, a lot of flavor and filling. I appreciate when a cookbook gives recipes by the season. Besides giving you a basic recipe it also gives you four more by the season. Many of the recipes are done this way. I'm looking forward to making the Homemade Ravioli, the fall recipe is Pumpkin with Crispy Sage, one of my favorite combinations. You will find everything from Breakfast to Desserts in this cookbook. Note: I received a copy of this cookbook from the publisher to review. All comments are my own.

As a creative cook who loves trying new recipes, Erin's variety of great tastes combined with her simplicity of instruction make this an excellent cookbook, even for the novice chef. While I am not a vegetarian myself, I often adapt recipes for friends and family with other dietary preferences so the recipes in this book provide a great place to begin! The layout of the cookbook is also visually beautiful, filled with lots of vibrant photos along with easy-to-follow instructions. I especially loved the introductory section on "stocking the pantry" as well as how the recipes are separated by season so you know what you're making is fresh. This is definitely a new staple in my kitchen and also makes a lovely gift for those who are vegetarian or just want to eat healthy!

I needed a "bridge" cookbook for adapting recipes to feed my family and follow my plant-based diet. This is a perfect fit! I especially like the simplicity - the author introduces a basic recipe, then follows with spin-off recipes. I have already recommended this book and the author's blog to friends who want to go vegetarian, but don't know where to start. Totally fantastic seasonal vegetarian cook book. Although I have never read Erin's blog, I felt like I was reading recipes from a friend. Wonderful book and I'm now off to follow her blog. :) Thanks Erin for your awesome book! I wish more people get hold of it! Totally fantastic seasonal vegetarian cook book. I love the way this cookbook is formatted: laying out 50 basic recipes, and then adding four variations of each to cover each season. You could cook your way through this book quarterly and it would take a year to cover all the recipes. Consider purchasing.
