    She stresses organic- awesome. She stresses that these are indulgences and shouldn't be eaten in large quantities. true! Explains how over the counter gluten free foods are more processed and worse for you than gluten containing products--yep! She notices the omega ratio-people often over look this, so good job Tammy! Explains in detail the differences between flours and starches she uses and the sweeteners/sugars. She explains when and why she uses those in certain recipes. Teaches us tips and hints of baking: how to read recipes, mix dry with dry, wet with wet, then both together. Thank you! and thanks for organizing the recipes correctly and efficiently! Give a man a fish he eats once, teach him how to fish he eats for a lifetime. She teaches us how to bake gluten free, how to experiment, and how to discover the magic behind it all. She doesn't simply tell us the recipes. I think this is what made me fall in love with the book: Her thoughtfulness on teaching us the magic and joy of baking. She also gives us amazing tips about how to handle restaurants and traveling! This woman in the beginning of the book has us believe she doesn't know much about cooking or nutrition, but she knows why more than most nutritionist and made a heck of a better recipe book than most culinary and nutritionists do. And she did a heck of a lot more science. Don't sell yourself short there Tammy! Why only three stars? I don't like all of the sugar they use. I really don't. I wish there was a way she could not use brown sugar or the amounts she uses, but I trust that it's the best recipe she could make without completely sacrificing the taste. And as she stresses, it's ok if it's a treat, don't over indulge! But still....it made me refrain from the five stars :( Also, I hate pork, bacon, sausage, alcohol...yeah xp I just don't like a lot of the recipes.

Credicott's tone is personable, but veers toward the preachy. So if you can ignore that, the recipes are mostly day-to-day stuff, nothing too fancy or with weird ingredients. Baked goods use a lot of sorghum, teff, and brown rice flour—among others—with potato and tapioca starch, and xanthan gum. There aren't any eggs, and there's no commercial egg replacers, just more water, pureed fruit, or probably extra leaveners. There's lots of coconut: flour, milk, cream, shredded, and sugar. The book uses "natural" sugars like maple syrup and evaporated cane juice. Fats are mostly coconut oil, non-dairy butter, or palm shortening, often a mix of two of those. Each recipe has at least one huge color photo and head notes (which vary in helpfulness; again, I don't need you telling me my fried food business), and they often have storage advice. Measurements are in U.S. volume and metric (grams and mL). It has an ingredient index, then a recipe index by chapter with color thumbnails, and even has some end notes for references. A great cookbook if you can ignore her slightly preachy tone, or, I guess, if you're into that sort of thing.

Tammy also disperses her own humor throughout her recipes. The recipes are very organized. Ingredients are separated by "wet", "dry" and "add-ins" making putting it all together very easy. Even for my husband, who doesn't have to eliminate any of these items, this and Tammy's other books are his go to recipes for meals.     Decent informational read. I'm not interested in using xanthan gum because it's derived from corn. The overwhelming majority of the recipes call for its use and were too complicated for my liking in the number of ingredients used. Found a few that sound good, including ones for my meat eaters, but no baked goods due to the reason already stated. Decent informational read.     Lots of recipes that were familiar. Would be nice to have recipes for baked goods that provided options of buying a whole bunch of different flours (like this one did) or the option for buying GF flour blend (this one didn’t and that’s what I buy). So I have some recipes here I want to try, but will have to figure out the measurements of all the floors combined and experiment. I’m sure I’m not alone in looking for shortcuts in a busy life.

    I am buying this book! The title does not do the book justice - "healthy" and "gluten-free" make me cringe. I am not gluten-free, but I am dairy-free. I scour gluten-free cookbooks (and paleo diet and vegan cookbooks), because they tend to have more dairy-free recipes; however, I despise the idea of mixing a huge variety of flour or other ingredients to get that taste "just right." It is too expensive and complicated for me, so I find myself finding only a few recipes in most cookbooks. Not only I am buying this book! The title does not do the book justice - "healthy" and "gluten-free" make me cringe. I am not gluten-free, but I am dairy-free. I scour gluten-free cookbooks (and paleo diet and vegan cookbooks), because they tend to have more dairy-free recipes; however, I despise the idea of mixing a huge variety of flour or other ingredients to get that taste "just right."     Excellent collection of GF recipes. Tried the Corn Dog Cupcakes first and was truly amazed. There is some pantry-stocking to do at first, but once done, the recipes are simple and easy. My only complaint would be that the main courses rely too heavily on chicken. Would like to have seen more calling for grass-fed beef, or sustainable seafood, though there are a couple of those. All in all, wonderful!

    Easy recipes, simple ingredients, especially for the entrees and sides. I am not a baker, and would be disinclined to bake using these recipes (which can call for several different types of flours, starches, etc.). But for dinners, soups, salads, and sides, I look forward to making many of these dishes, which seem healthy, affordable, and accessible, especially to a newer GF convert!
